Cinnamon Sugar Muffins



I recently got a smartphone and found the app BigOven. It is an app where you can look up and rate recipes, meal plan and make a grocery list. I am kind of in love with it.  I discovered a recipe for cinnamon muffins through this app. I made these muffins on Easter Sunday and they were a big hit! Get the original recipe here.

Yields: 12

Ingredients
3 cups of All-purpose flour
4 teaspoons of baking powder
1 teaspoon of salt
1/2 teaspoon of nutmeg
2/3 cupof vegetable oil
2 large eggs
1 3/4 cup of granulated sugar; divided
1 cup of milk
2 teaspoons of cinnamon
1 stick of melted butter

Directions:
  1. Preheat oven to 350 degrees
  2. In a large bowl combine flour, baking powder, salt, nutmeg and 1 cup granulated sugar. In a small bowl combine oil, eggs and milk. Add wet ingredients to the dry ingredients and stir until just combined (I would also add at least a teaspoon of cinnamon into the mixture itself as well)
  3. Fill muffin cups 3/4 full and bake for 15 - 20 minutes or until muffins are golden brown
  4. While muffins are baking combine 3/4 cup remaining granulated sugar and cinnamon. Place melted butter in a separate small dish and set both aside.
  5. When muffins come out of the oven, run a knife around the edges of each muffin cup, invert muffins onto a baking sheet. Brush muffin tops with melted butter and dip immediately into cinnamon sugar.
